Meet: Fred Palmer


Everyone knows Fred, as he's been here since the beginning of Giancarlo's history. He is now a General Manager here, and is loving every second of his time at Giancarlo's. Fred has seen the evolution of Giancarlo's, and when asked of his favorite memory of his time here he said:

“I am the General Manager and Sommelier here at Giancarlo’s. I have been here since we first opened, going on five and a half years now! The biggest evolution from when I first started to now, has been that of our dinner service. When we first opened we served lunch and private events in the evenings. The evening events would be mostly plated dinners and pharmaceutical dinners. Over time, we started doing Chef’s Tables, where we would have people coming in for a prepared menu where they would sit down and have the traditional dining service of a prepared dining menu. After doing one for Valentine’s day, we decided as a whole that we would start having dinner service. With that we created our first menu and initial seating area, and over time the menu and seating areas have changed, arrangements changed, we’ve expanded our patio, we’ve built a large bar area. It has been really cool to see the change over time, especially starting without doing dinner service and how it has changed it’s been quite a revolution."
